Blueberry Muffins

Ingredients
- 1 1/2 cups flour
- 3/4 cup sugar
- 1/2 teaspoon salt
- 2 teaspoons baking powder
- 1/3 cup olive oil
- 1 large egg
- 1/2 cup milk
- 1 1/2 teaspoons vanilla extract
- 1 cup fresh or frozen blueberries
Directions
- Preheat oven to 400°F.
- In a bowl, combine flour, sugar, salt, and baking powder.
- In a separate bowl, mix oil, egg, milk and vanilla until combined.
- Combine the contents of the two bowls, being careful not to over mix.
- Once mixed, fold in the blueberries.
- Line a muffin tin with baking cups and distribute batter evenly to make 12 muffins.
- Sprinkle some sugar on top of each muffin before placing in the oven.
- Bake for 15-20 minutes or until a toothpick insert comes out clean.
