Blueberry Muffins

Ingredients

  • 1 1/2 cups flour
  • 3/4 cup sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup olive oil
  • 1 large egg
  • 1/2 cup milk
  • 1 1/2 teaspoons vanilla extract
  • 1 cup fresh or frozen blueberries

Directions

  1. Preheat oven to 400°F.
  2. In a bowl, combine flour, sugar, salt, and baking powder.
  3. In a separate bowl, mix oil, egg, milk and vanilla until combined.
  4. Combine the contents of the two bowls, being careful not to over mix.
  5. Once mixed, fold in the blueberries.
  6. Line a muffin tin with baking cups and distribute batter evenly to make 12 muffins.
  7. Sprinkle some sugar on top of each muffin before placing in the oven.
  8. Bake for 15-20 minutes or until a toothpick insert comes out clean.
