Chicken Pad Thai

Ingredients
- 12-14 oz rice stick noodles
- 2 chicken breasts, trimmed
- 1 cup pad thai sauce
- 1 egg
- 1/4 cup chopped peanuts
- 2 tablespoon olive oil
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1 lime
Directions
- Cook rice noodles in boiling water according to package. Set aside.
- Heat a skillet over medium-high heat and add oil.
- While oil is heating, coat the chicken breasts with the salt and garlic powder
- Once pan is hot, add chicken, searing on all sides until chicken reaches internal temperature of 165°F. Set chicken aside.
- Fry egg in pan for 1 minute, then break up into pieces. Add noodles and sauce, stir until coated.
- Let simmer for a minute, stir, and let simmer again for another minute.
- Toss in chicken and peanuts, zest with juice from the lime, serve immediately.
