Chicken Pad Thai

Directions

  1. Cook rice noodles in boiling water according to package. Set aside.
  2. Heat a skillet over medium-high heat and add oil.
  3. While oil is heating, coat the chicken breasts with the salt and garlic powder
  4. Once pan is hot, add chicken, searing on all sides until chicken reaches internal temperature of 165°F. Set chicken aside.
  5. Fry egg in pan for 1 minute, then break up into pieces. Add noodles and sauce, stir until coated.
  6. Let simmer for a minute, stir, and let simmer again for another minute.
  7. Toss in chicken and peanuts, zest with juice from the lime, serve immediately.
