Easy Peasy Vegetable Soup

Ingredients
- 1 can chicken broth (14 ounces)
- 1 can tomato-vegetable juice cocktail (11.5 ounces)
- 1 cup water
- 1 large potato, cubed
- 2 stalks celery, sliced
- 1 can diced tomatoes (14.5 ounces)
- 1 bag frozen mixed vegetables
- Salt and pepper, to taste
Directions
- In a large pot, combine broth, tomato juice, water.
- Add cubed potatoes, sliced celery, and mixed vegetables.
- Season with salt and pepper to taste.
- Bring to a boil and simmer for 30 minutes or until potatoes are soft.
