Easy Peasy Vegetable Soup

Ingredients

  • 1 can chicken broth (14 ounces)
  • 1 can tomato-vegetable juice cocktail (11.5 ounces)
  • 1 cup water
  • 1 large potato, cubed
  • 2 stalks celery, sliced
  • 1 can diced tomatoes (14.5 ounces)
  • 1 bag frozen mixed vegetables
  • Salt and pepper, to taste

Directions

  1. In a large pot, combine broth, tomato juice, water.
  2. Add cubed potatoes, sliced celery, and mixed vegetables.
  3. Season with salt and pepper to taste.
  4. Bring to a boil and simmer for 30 minutes or until potatoes are soft.
