Egg Roll in a Bowl
Ingredients
- 1 1/2 lbs ground pork (or ground turkey/chicken)
- 16 oz bagged coleslaw
- 1/2 cup carrot matchsticks
- 1/2 cup chopped red cabbage
- 1/2 sweet onion, sliced
- 2 teaspoons minced garlic
- 2 teaspoons sesame seed oil
- 1 teaspoon rice vinegar
- 1/3 cup coconut aminos
- 1/2 teaspoon onion powder
- 1/4 teaspoon ground ginger
- Salt and pepper to taste
- Green onions for garnish
Bang Bang Sauce
- 1/2 cup mayo (or Greek/dairy-free yogurt)
- 1 1/2 teaspoons coconut aminos
- 1/2 teaspoon garlic powder
- 1-2 tablespoons sriracha
- Salt and pepper to taste
Directions
- Heat sesame oil in a skillet over medium heat. Add garlic and onions and cook for 2-3 minutes.
- Add ground meat and brown for about 5 minutes, then drain excess grease.
- Stir in coleslaw, carrot matchsticks, red cabbage, onion powder, and ground ginger. Cook for 5 minutes, stirring occasionally.
- Add rice vinegar and coconut aminos. Cook for 8-10 minutes, until vegetables reach desired tenderness.
- While the skillet finishes, whisk together the mayo, coconut aminos, garlic powder, sriracha, salt, and pepper in a small bowl.
- Serve hot, drizzled with bang bang sauce and garnished with green onions.
