Egg Roll in a Bowl

Ingredients

  • 1 1/2 lbs ground pork (or ground turkey/chicken)
  • 16 oz bagged coleslaw
  • 1/2 cup carrot matchsticks
  • 1/2 cup chopped red cabbage
  • 1/2 sweet onion, sliced
  • 2 teaspoons minced garlic
  • 2 teaspoons sesame seed oil
  • 1 teaspoon rice vinegar
  • 1/3 cup coconut aminos
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground ginger
  • Salt and pepper to taste
  • Green onions for garnish

Bang Bang Sauce

  • 1/2 cup mayo (or Greek/dairy-free yogurt)
  • 1 1/2 teaspoons coconut aminos
  • 1/2 teaspoon garlic powder
  • 1-2 tablespoons sriracha
  • Salt and pepper to taste

Directions

  1. Heat sesame oil in a skillet over medium heat. Add garlic and onions and cook for 2-3 minutes.
  2. Add ground meat and brown for about 5 minutes, then drain excess grease.
  3. Stir in coleslaw, carrot matchsticks, red cabbage, onion powder, and ground ginger. Cook for 5 minutes, stirring occasionally.
  4. Add rice vinegar and coconut aminos. Cook for 8-10 minutes, until vegetables reach desired tenderness.
  5. While the skillet finishes, whisk together the mayo, coconut aminos, garlic powder, sriracha, salt, and pepper in a small bowl.
  6. Serve hot, drizzled with bang bang sauce and garnished with green onions.
