Fluffiest Pancakes

Ingredients

  • 3 cups all-purpose flour
  • 3 tablespoons sugar
  • 1 1/2 tablespoons baking powder
  • 3/4 teaspoon baking soda
  • 3/4 teaspoon salt
  • 3 large eggs
  • 2 5/8 cups milk
  • 6 tablespoons melted butter
  • 1 1/2 teaspoons vanilla extract
  • Butter or oil for cooking

Directions

  1. In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
  2. In another bowl, beat eggs and mix in milk, melted butter, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined (some lumps are okay).
  4. Let the batter rest for 5-10 minutes to allow leavening agents to activate.
  5. Preheat a non-stick skillet or griddle over medium-low heat and lightly grease with butter or oil.
  6. Pour 1/4 cup of batter onto the skillet for each pancake.
  7. Cook for 2-3 minutes until bubbles form on the surface and edges look set.
  8. Flip and cook for another 1-2 minutes until golden brown.
  9. Repeat with remaining batter, greasing the pan as needed.
  10. Serve warm with butter, syrup, or your favorite toppings.
