Ingredients
- 3 cups all-purpose flour
- 3 tablespoons sugar
- 1 1/2 tablespoons baking powder
- 3/4 teaspoon baking soda
- 3/4 teaspoon salt
- 3 large eggs
- 2 5/8 cups milk
- 6 tablespoons melted butter
- 1 1/2 teaspoons vanilla extract
- Butter or oil for cooking
Directions
- In a large bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
- In another bowl, beat eggs and mix in milk, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined (some lumps are okay).
- Let the batter rest for 5-10 minutes to allow leavening agents to activate.
- Preheat a non-stick skillet or griddle over medium-low heat and lightly grease with butter or oil.
- Pour 1/4 cup of batter onto the skillet for each pancake.
- Cook for 2-3 minutes until bubbles form on the surface and edges look set.
- Flip and cook for another 1-2 minutes until golden brown.
- Repeat with remaining batter, greasing the pan as needed.
- Serve warm with butter, syrup, or your favorite toppings.
