Jamaican Chicken and Roasted Vegetables
Ingredients
- 2 chicken breasts
- 1 tablespoon olive oil
- 2 Granny Smith apples
- Assorted vegetables (asparagus, sweet potatoes, peppers, onions, zucchini, squash)
Rub
- 2 tablespoons cinnamon
- 4 tablespoons chili powder
- Pinch of cayenne
Directions
- Cube apples and vegetables into bite-size pieces
- Toss apples and vegetables in olive oil and cover with 1/2 of the rub
- Coat the chicken with the other half of rub
- Roast everything on a foil-lined baking sheet for 30-40 minutes at 425°F until chicken temps at 165°F
