Jamaican Chicken and Roasted Vegetables

Ingredients

  • 2 chicken breasts
  • 1 tablespoon olive oil
  • 2 Granny Smith apples
  • Assorted vegetables (asparagus, sweet potatoes, peppers, onions, zucchini, squash)

Rub

  • 2 tablespoons cinnamon
  • 4 tablespoons chili powder
  • Pinch of cayenne

Directions

  1. Cube apples and vegetables into bite-size pieces
  2. Toss apples and vegetables in olive oil and cover with 1/2 of the rub
  3. Coat the chicken with the other half of rub
  4. Roast everything on a foil-lined baking sheet for 30-40 minutes at 425°F until chicken temps at 165°F
