Meatloaf with Thai Sweet Chili Sauce

Ingredients
- 2 eggs
- 3/4 cup milk
- 3/4 cup breadcrumbs
- 2 pounds fresh ground beef (preferably never frozen)
- 1 small onion, diced
- 1 tablespoon Thai sweet chili sauce
Sauce
- 1/2 cup Thai sweet chili sauce
- 1/2 cup ketchup
- 1 tablespoon brown sugar
Directions
- Preheat oven to 350°F
- Beat eggs and milk in a small bowl, stir in breadcrumbs, set aside
- In a large bowl, combine beef, diced onions, and 1 tablespoon Thai sweet chili sauce
- Add the breadcrumb mixture to the meat mixture and combine
- Form a meat loaf, placing on a lightly-greased, foil-lined baking tray
- Bake for 40 minutes
- Mix ketchup, brown sugar, and remaining Thai sweet chili sauce
- Remove from oven and spread sauce mixture over the loaf
- Return to oven for an additional 10 minutes, or until internal temperature of loaf is 165°F
- Allow loaf cool for 10 minutes, then slice and serve
