Meatloaf with Thai Sweet Chili Sauce

Ingredients

  • 2 eggs
  • 3/4 cup milk
  • 3/4 cup breadcrumbs
  • 2 pounds fresh ground beef (preferably never frozen)
  • 1 small onion, diced
  • 1 tablespoon Thai sweet chili sauce

Sauce

  • 1/2 cup Thai sweet chili sauce
  • 1/2 cup ketchup
  • 1 tablespoon brown sugar

Directions

  1. Preheat oven to 350°F
  2. Beat eggs and milk in a small bowl, stir in breadcrumbs, set aside
  3. In a large bowl, combine beef, diced onions, and 1 tablespoon Thai sweet chili sauce
  4. Add the breadcrumb mixture to the meat mixture and combine
  5. Form a meat loaf, placing on a lightly-greased, foil-lined baking tray
  6. Bake for 40 minutes
  7. Mix ketchup, brown sugar, and remaining Thai sweet chili sauce
  8. Remove from oven and spread sauce mixture over the loaf
  9. Return to oven for an additional 10 minutes, or until internal temperature of loaf is 165°F
  10. Allow loaf cool for 10 minutes, then slice and serve
