One Pan (Chicken Sausage)

Ingredients

  • 3 raw potatoes (sweet, yellow, red, whichever!)
  • 1 package fully-cooked chicken sausage
  • Other chopped vegetables (zucchini, broccoli, brussels sprouts, squash, anything!)
  • 1/2 cup olive oil
  • 1 tablespoon garlic salt
  • 1 tablespoon Italian seasoning

Directions

  1. Preheat oven to 425°F
  2. Cube sweet potatoes and cover with olive oil
  3. Place on foil-lined baking sheet and cook for 30 minutes
  4. Cut chicken sausages into bite-size pieces, likewise for other vegetables
  5. After potatoes cook for 30 minutes, take out of oven
  6. Combine potatoes with chicken sausage and remaining vegetables
  7. Season with onion powder, italian seasoning, and salt and pepper to taste
  8. Bake in oven for another 30 minutes, until all vegetables are soft
