Pressure Cooker Pulled Pork

Ingredients
- Pork Butt (4lbs-ish)
- 1 1/2 cups chicken broth
- 1 tablespoon Worcestershire sauce
- 2 tablespoons olive oil
- 1/2 cup barbecue sauce
Rub
- 3 tablespoons light brown sugar
- 2 teaspoons salt
- 1 teaspoon dry mustard
- 1 teaspoon black pepper
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
Directions
- Trim fat from the pork, cut into smaller pieces (4 or so)
- Set pressure cooker to “saute” and add the olive oil
- Generously coat the pork with the dry rub
- Once the oil is hot, sear the pork pieces on all sides. (Flip every minute or so. You may need to repeat this step if the pieces do not all fit in together)
- Remove the pork pieces and add the chicken broth, using a wooden spoon to de-glaze the inside of the pressure cooker. Once de-glazed, stir in Worcestershire sauce.
- Add pork pieces back into the pressure cooker, seal the cooker, and cook at High Pressure for 1 hour.
- Wait for the pressure to release, then remove.
- Pull the pork, mix in the barbecue sauce, and enjoy!
